Since premire of the Mandalorian there has been an obsession with Baby Yoda. Here is my recipe on how to make amazing cookies that the family will love and bring a little joy into your life.
Matcha Cookies
1 cup(Sticks) Unsalted Butter, softened
1/2 cup Powdered Sugar
2 cups All Purpose Flour
2 tablespoons Sugimoto Culinary Matcha Powder (Click Link)
Pinch Salt
Yoda Cookie Cutter (Click Link)
Directions
Cream together soften butter with powdered sugar
While butter and sugar are mixing. Sift together flour, matcha powder and salt. Reduce speed of mixer and add flour mixture. After about 30 seconds. Stop mixer, scrape sides thoroughly and mix till combined.
Shape dough into a disk. Wrap with plastic film and refrigerate for 30 min.
Preheat oven to 350 degrees
Remove dough from fridge. Using rolling pin and little flour gently roll dough into about 1/4 inch thickness.
Cut cookies. Tip: Try and do this while cookies are still cool. As dough warms it will be come harder to work with.
Place cookies on cookie sheet about 1 inch apart.
Bake in oven for 9-12 min
Allow to cool before transferring to cooling wrack
Chocolate Ganache
To decorate eyes and face
2 oz Dark Chocolate or Semi Sweet Chocolate, shredded
4 fl oz Heavy Cream
1 tsp Unsalted Butter
1 tsp Corn Syrup
Directions
Using a food processor, box grater or knife chop/shred chocolate into about the same size a shredded Parmesan cheese.
In microwaveable bowl heat heat heavy cream to a boil.
Using a whisk add shredded chocolate to heavy cream. Whisk until smooth
Add corn syrup and butter.
To Decorate
Allow ganache to cool to around 105 degrees or feels just warm to the touch and has the viscosity of hot fudge
Place ganache in disposable pastry bag or heavy duty zip lock bag. Twist top of bag above chocolate to remove air. Starting with just a little cut just enough for the ganache to start leaving the bag. You can always cut more but better to work your way up.
Start decorating eyes and have fun!
