Maple Blueberry Coffee Cake

Here is a great coffee cake recipe that you can sub the fruit out with almost anything. Try this very easy and delicious recipe. I use quick oats for the maple flavor and if you wish to sub it out just use plain quick oats go right ahead.


I love this for a quick breakfast on work day with a nice cup of coffee.

Ingredients- Coffee Cake

1 1/2 cups All Purpose Flour

3/4 cup White Sugar

1/2 tsp Salt

2 tsp Baking Powder

1/3 cup Vegetable Oil

1 Egg

1/3 cup Milk

1 cup Blueberries


Ingredients- Streusel Topping

1/2 cup White Sugar

1/3 cup All Purpose Flour

1/4 cup Butter

1 1/2 tsp Ground Cinnamon


Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 8" square cake pan.

  2. Combine flour, sugar, salt and baking powder, whisk to combine. Place vegetable oil, egg and milk in a large bowl. Whisk to combine. Add flour mixture. Fold in blueberries. Fill 8" pan with coffee cake mixture and spread evenly.

  3. To make crumb topping: first cut butter into pea sized cubes. Mix together sugar, flour, butter,instant Quaker Instant Maple Oats and teaspoons cinnamon. Mix with fork, and sprinkle evenly over coffee cake batter before baking.

  4. Bake for 30 to 35 minutes or until done when toothpick comes out clean.
