Here is my recipe for a wild yeast sourdough pizza dough that will make excellent pizza, golden brown, crispy and even better you can freeze the raw dough. This dough also works great for calzones, personal pizzas, bread sticks or focaccia.
Ingredients
454 grams Indestructible Sourdough Starter (I use bread flour in this starter for this recipe)
226 grams Lukewarm Water
600 grams All Purpose Flour
2 Teaspoons Salt
1/4 tsp Active Dry Yeast
Directions
Follow directions for the Indestructible Sourdough Starter and make sure to have enough left over to feed the starter again and keep your culture alive.
In a mixer add water, Indestructible Sourdough Starter, and dry yeast and wait 2 min for yeast to dissolve. Then add flour, and salt. Mix to combine, then knead for about 7 minutes in a mixer with the dough hook, until the dough wraps itself around the hook and cleans the side of the bowl.
Place the dough in a lightly greased container for 1 hour. (I recommend Cambro...I am telling you I need to write a blog about this so you can understand. These containers will change your life), cover and let rise until doubled in volume. For a faster rise, place the dough in a warm spot, or double the yeast.
Book fold the dough and let rise for 1 more hour. Curious about how to book fold. Check out this great blog from Serious Eats about Bread Making 101.
Once second proof is complete the dough may be portioned and used but I would recommend waiting. Portion into desired weight depending on use. Place in fridge overnight or in freezer.
If using same day. Retard in fridge and remove from fridge 1 hour before baking.
Frozen Dough: Pull the night before and place in fridge.. May be frozen for up to 2 months. Then follow he steps below for refrigerated prep.
Refrigerated dough: Pull dough 1 hour before use s and rest at room temperature
Preheat oven to 500 degrees Fahrenheit. If using a pizza oven I strongly recommend 700 degrees.
Chef Tip: I recommend using a pizza steel.
Place dough in pan, or on pizza peel with light flour or cornmeal and shape pizza into desired shape.
Top with sauce, vegetables, cheese and meat. Place on pizza steel for 10-20 min.
Cool for 3 min, cut and enjoy!
